If you’re looking for an easy breakfast option for whole30, look no further!
At the beginning of the year, I made a gutsy goal to try to do whole30 again, but this time for 90 days. For me, having restrictions on what is allowed keeps me healthy. Otherwise, I have absolutely zero self-restraint.
A few weeks in, I was in desperate need of an easy breakfast option for whole30 that was NOT eggs. after 21 days of eggs for breakfast, I was so sick of them.
Enter grain-free oatmeal – which is essentially just apple sauce with cashews in it to make it a better consistency.
This recipe is so easy to make and is a great easy breakfast option if you’re doing whole30!
The hardest part is planning ahead and remembering to soak the cashews the night before. They need that overnight soak to get the proper consistency. As much as I aspire to be one of those organized people, I really am not.
I’m sure some people will question the calories in this or the number of grams of sugar. In my opinion, it’s healthy, whole foods. I portion it into 1-cup portions and serve it with a couple of raspberries.
Trust me, this option is MUCH healthier than my usual Bacon and Egg McMuffin from McDonalds, so I’ll take it! Having some containers in the fridge means I can grab them on my way out the door and heat them up at work.
