If you’re looking for an easy meal idea, look no further! These enchiladas are absolutely to die for.
I’ll be honest, though – I had never had an enchilada before in my life. I didn’t even know what they were. Then one glorious day about a month ago my partner suggested we make enchiladas for dinner.
Naturally, my immediate reaction was to consult Pinterest and find the best recipe to tackle this dish I had never heard of. That’s when I found this amazing recipe from Gimme Some Oven. Not only did it look simple and come with an easy to follow GIF for assembly, it provided a very simple homemade enchilada sauce.
If we’re going to tackle a dish I had never had before, we most certainly were going to make the sauce from scratch – why not!
Making the enchiladas
We filled the tortillas and rolled them up. Then put them in our classic 9×13 pyrex dish, where they awaited their delicious outfitting of toppings. After, it was into the oven. When they were done, I pulled them out and garnished with some green onions.
Pro tip: use scissors to cut your green onions, life changing!
For a dish I had never had, these things were to die for. I couldn’t believe how tasty they were. And while I don’t actually know what storebought enchilada sauce tastes like, I’m going to wager it’s no where near as good as the home made stuff!
Not to mention the homemade stuff is so easy. Plus – it cooks while you’re prepping the rest anyway. Even with making your own sauce, this definitely still falls into the easy meal idea category!
This is the second time I’ve made them since the initial suggestion about a month ago. We made to sure make them at my house so my sister could try them. She also had never heard of or had an enchilada before. Upon putting the first bite in her mouth, she spewed a bunch of profanities about how good they were.
Needless to say – these things are a huge success in my house!
